Starter

After I added a recipe for sourdough biscuits, the requests for a starter recipe could not be ignored. I am sorry that I didn't add it before, but I am always ready to cook so here is one way to make a sourdough starter...

Flour

I use the easiest method of making starter, which is a mixture of flour, water and yeast.

♥ 4 cups of flour

♥ 4 cups of warm water

♥ 2 1/4 teaspoons of yeast or 1 package of yeast

add yeast

Measure out 4 cups of warm water, not to hot, just above luke warm. This will activate the yeast without killing it.

mix yeast water

Mix with a whisk until fully incorporated.

water and flour

Pour the yeast water to the bowl with the four cups of flour. Make sure that you are using a bowl that is not metal. It can be ceramic or plastic, but not metal. Mix it all together and cover with plastic wrap and a towel. Or if you are using a crock that has a lid, that works too. Set it aside for about 8 hours and when it is nice and bubbly it is ready to use.

At this point, I put my starter in the refrigerator. Whenever I am going to use some in a recipe, I take it out the night before, or set it in a warm place until it is at room temperature. Every time you take some out, you have to put some back in. So, if I used 2 cups of starter, I add 2 cups of flour and 2 cups of water back in and mix really well together. Then I put it back into the refrigerator. And that is how you make starter. So go make some and then make some of those really good, cheap sourdough biscuits, Okay?
