Eggs Over-Easy With A Zesty Twist...
![]()
One of our favorite breakfast meals to have in the summer is exactly what you see on this plate. The Lord provides an amazing variety of foods for us to enjoy. We recently found some great condiments to go with our eggs that you have just got to try...

To begin with what is on the plate is already tasty and pleasing to the eye. Why would you even need to add anything else to such a great meal? Robert has a friend from India that told us about a new pickle which we found at an international grocery store in Ames, Iowa.

You may already recognize the green salsa on the left. That is one of the best condiments and one that we already use on our eggs. The new pickle we tried is the Ginger Pickle Relish. It is a little spicy for those of you from the Midwest, but if you live West or South you will have no trouble. Here's a link where you can purchase this product: Indian Foods Co.

We like to pour a little green salsa on the plate near the eggs.

Then we get a little of the ginger pickle. The flavor of this pickle is bright and happy. I am not kidding. I am not trying to sound like a food critic. It really does give you a happy feeling when you taste it for the first time.

Mix up the ginger pickle and the green salsa together and then cut into the eggs to get some of that warm runny egg yolk.

Cut a little of the campari tomato. If you haven't tried campari tomatoes before, you have to try them. They are so good.

Grab some of the egg mixed with the ginger pickle/salsa and get ready to be astounded...

Just look at that great looking bite on the fork. By the way, Robert is the food demonstrator today. He is doing a fabulous job. Let's see what he thinks of our zesty eggs...

He thinks it's great! He is such a good sport. I couldn't ask for a better food tester/demonstrator. Thanks honey!
I hope you will give this a try. Really, it isn't that spicy...
