Sourdough Pancakes

Every time I make these pancakes, my family raves about how wonderful they taste. I love it when they compliment my cooking like that. But then again, why don't they react that way when I make all of the other meals? Hmmm, it must have something to do with that fact that they are pancakes...

The night before I plan to make pancakes, a little prep work has to take place. I take out 1/2 a cup of my sourdough starter and put it in a mixing bowl.

Then I pour in 2 cups of milk and add 2 cups of flour.

Mix it all up, cover tightly and leave it until the next morning.

Okay, now that it is morning, ( that was fast wasn't it?) it is time to crack two eggs into a small mixing bowl.

To the bowl with the eggs add 2 tablespoons of sugar, 1/2 teaspoon of salt and a 1/2 teaspoon of baking soda.

Whisk together and get ready to add it to the starter batter.

Even I have to admit that this looks kind of gross. Pour in the egg mixture to the starter mixture and whisk with lots of energy.

It will be slightly thick in the bowl but will spread out nicely on the preheated griddle.

I like to set mine to somewhere between 300 and 350.

When it is nice and hot it is time to scoop out 1/4 cup of batter and pour it on.

They are ready to flip when they start to get lots of bubbles but the batter is still slightly wet looking.

I love how the pancake is steaming. There are just some things I can't seem to make show up in my pictures. Anyway, where was I? Oh, pancakes, these are all definetly ready to be flipped over. Breakfast will soon be ready.

We are a butter loving family. We like to add lots of butter to our pancakes. They are pancakes after all, not diet food so should they be served with diet butter?

Our favorite syrup is Aunt Jemima, but Sam's club was selling Mrs. Butterworth's. I had a brilliant idea that since we ingest large amounts, copious amounts, obscene amounts of syrup, we needed to buy it in bulk. Well, can you guess what happened? The kids don't like Mrs. Butterworth's. So, this morning in an attempt to calm the troops I am trying this Cherry syrup. I hope they like it...

This is how Katie has her pancakes. Just to let you know, Brendan was the only kid that had it with cherry preserves. The rest of our clan managed to forgive my faux pas and have moved on. Life is good...
