Brussels Sprouts..!

Brussels Sprouts are one of our favorite vegetables. I know that if you cook them like we do, it will be a favorite in your house too.

Poor little brussels sprouts. They are so misunderstood. Some poor person a long time ago thought they should be boiled and ruined the sprouts reputation forever. I am here to tell you, as a converted sprout eater, that they can be delicious as God intended again.

Sprouts are really cute little cabbages. At least that is how they look to me. First we have to prep them before we can cook them.

I need to cut the end off and peel away the outer green leaves.

Then I cut it in half. If there are any really large ones in there, cut them in to fourths.

By the time I am finished cutting them all, I have a big pile of leaves and a small bowl of sprouts.

Now that the sprouts are ready, I am going to get out a half a stick of butter...

Get out a big skillet and melt the butter. Set the heat to medium.

I like to melt the butter until it starts to brown, it gets the whole browning process moving quickly.

Add the sprouts and stir them well into the butter.

Make sure that all of that great butter covers all of the sprouts. The butter is part of the secret to tasty sprouts.

I have made this often enough to know that if I am not careful, they will burn. And then no one will like them. So brown them, stirring often to turn them over. Once they are browned to your liking, it is time to steam them.

Start by adding 4 tablespoons of water and quickly cover. Lower the heat to low. After a few minutes check to see if they are soft enough. If they are not, add more water and cover again. Crunchy brussels sprouts are not the aim here, we want soft ones.

Press into the sprouts to see if they are done. These are done and ready to go into a pretty little bowl.

They are all buttery, browned and soft and have a great flavor. There are a lot of excited children at my house. They can't wait to eat them...
