Eggplant Soup...

Eggplant is such a beautiful looking vegetable. If you are like me you might have a hard time finding recipes for them. This recipe for eggplant soup is very flavorful and smooth. I hope you will give it a try...

Japanese or American Eggplant will work with this recipe. Just grab whichever one you find at the store, but if you have a choice of both then pick the Japanese. Don't ask me why, just a personal preference...
♥ 2 eggplant
♥ 2 onions
♥ 3 cloves garlic
♥ olive oil
♥ 6 cups chicken broth
♥ salt to taste

Cut the stems off the top and slice each eggplant in half. Brush the cut side with olive oil and salt and pepper to your liking. Preheat the oven to 375 degrees and turn the eggplant cut side down. Place them in the oven and roast until nice and soft, about 30 minutes. Check on them to make sure they aren't getting overcooked.

They should look like this. Flip them over and let them cool until you can handle them without burning yourself. They smell so good...

Now it is time to get out the onion and slice them into rings. Peel three cloves of garlic and chop roughly. Get out your dutch oven and heat over medium heat. Pour in two or three tablespoons of olive oil and heat. Add the onion and cook until carmelized. After they are pretty well done you can add the garlic and lightly brown that as well.

Doesn't that look good? With ingredients like these, how can you go wrong?

While that is cooking, the eggplant should be cool enough to handle now. Scoop the eggplant out and set it aside...

Pour 6 cups of chicken broth into the dutch oven with the caramelized onions and garlic. At this point you can salt to taste as well. Bring the mixture to a boil and simmer for a few minutes...
Add the eggplant to the broth and cook until heated through. Take off the heat and get ready to process in a food processor.

Scoop out the vegetables and broth and put into food processor. Cover and turn it on and leave it on for a good minute. This will be done in batches. You may or may not need all of the broth. It really depends on how thick you would like the soup to be.

I ended up with a big huge soup server full of good thick eggplant soup. It has a unique smell and flavor all it's own. I love this soup, it is good for you and low in calories. If you are on a low carb diet it also works well for that too.

You can garnish the soup with fresh chopped tomatoes or have it plain. Either way it is going to be fantastic.
